Preparation :

Mash the avocado flesh with a fork and squeeze the lime juice over it.

Peel the onion and mince it very finely. Add to mixture and sprinkle with paprika.

Peel the mangoes and cut them into long sticks.

In a bowl, mix the goat cheese with the cilantro. Add a few pinches of Espelette pepper and lightly salt.

Divide the avocado mixture over the wraps. Arrange a few mango sticks and finish with a thick layer of very fresh goat cheese.

Roll the wraps and cut them in half vertically. More than to savor!
